Gluten: One of the Three Big Inflammation-Causing Components in our Diet



The three big inflammation-causing components in our diet are: milk, wheat and sugar.

While we hear of coeliac’s disease and how awful it can be, most of us would be sensitive to these three items to a certain degree. Today, we look at BBC GoodFood’s article on 10 food that you think are gluten-free but aren’t.

“…Approximately one in every 100 people in the UK have coeliac disease, and a whole lot more are choosing to remove gluten from their diets for perceived health benefits. Gluten dodgers know to avoid wheat and keep an eye on grains, but did you know everything from your cereal to your sausages might be hiding some problematic protein? Here, Coeliac UK shines the spotlight on the foods you may not realise contain gluten…

1. Sausages
2. Soy sauce
3. Stock cubes
4. Buckwheat flour
5. Dry roasted nuts
6. Spelt
7. Couscous
8. Chocolate
9. Taramasalata
10. Corn flakes

Special mention on spelt, it does contain gluten but of a different molecular make-up than gluten in modern wheat. It is more fragile and more water soluble, which makes it easier to digest.

Food-allergy.org had this to say: “Spelt does indeed contain gluten and should not be eaten by anyone who is gluten-sensitive or has celiac disease, but the presence of gluten does not make spelt wheat.
Although celiacs and those with gluten intolerance should not consume spelt, SOME people with food allergies can eat it without reaction.”
